Nisin, also known as Streptococcus lactis peptide, is a polypeptide produced by Streptococcus lactis, consisting of 34 amino acid residues with a molecular weight of approximately 3,500 Da. It effectively inhibits most Gram-positive bacteria and demonstrates strong inhibitory effects on Bacillus spores, making it widely used as a food preservative in the food industry.
Under physiological pH conditions in the human body and through the action of α-pancreatic rennet protease, nisin can be hydrolyzed into amino acids.
